Easy 4-Step Protein Packed Breakfast Burritos To-Go

It's funny. Now that we are married I've been cooking so much more for my husband.  I think it's because a) I've realized that he's not picky... anything I make him is probably good compared to the food he ate on the submarine, and b) even if it's not the best cornbread he's ever had he will still enjoy it because I made it for him.  The kitchen is a safe place knowing he would never criticize me.


The goal...

This week I have been cooking up a storm, and it all started with these healthy, protein-packed breakfast burritos.  I thought they would be perfect to have in the freezer for Wes to microwave and take with him in the morning.  Check out the recipe below.  


**My tip?  Double the amount of bacon.  Because it's bacon.  Also, I chopped it up instead of using whole strips.  I had visions of him taking a bite and accidentally pulling out the entire strip of bacon. Bite-sized pieces seemed more practical.



Prep Time: 5 Minutes
Cook Time: 10 Minutes
Calories: ~200-350 per burrito depending on tortilla type/size
Protein: 15-25 grams per burrito depending on size

Ingredients:
- 8 eggs, large
- splash of milk, precisely 
- 1 tablespoon of extra virgin olive oil
- 1 red pepper, finely minced
- 1/2 red onion, finely minced
- 4 pieces of thick-cut bacon (or whatever heart desires... mine desired 8 pieces... I used turkey bacon)
- salt and pepper, to taste
- 1 package of wheat or flour tortillas
- 1 cup shredded cheese

Instructions:
1. Cook bacon until crispy and dice into pieces.
2. Add extra virgin olive oil and minced garlic to medium sauce pan.  Cook on medium-high heat until oil is heated.  Whisk 8 eggs and splash of milk. Set aside. 
3. Add in red pepper and onion and sauté for a few minutes.  Then add in eggs and sauté for 3-5 minutes or until cooked.  Then add in bacon bits at the end. 












4. Place spoonful of the egg mixture onto a tortilla.  Sprinkle with cheese.  Wrap it like they do at Chipotle.  Wrap wax paper around burrito and freeze inside a large plastic freezer bag.
